After an earlier-than-usual start I found myself getting punchy and almost ready to pass out. So I started drawing this on the way home, mainly because I didn’t know what to do and thought I might be done with the fancy eyes I had been doing (and then decided that I wasn’t, because I’d been limiting myself with mostly organic shapes), but also musing about the potatoes I was going to make when I got there:
For those of you who are interested, this is what I ended up doing. Between you and me, I feel like I discovered fire because I didn’t know how to make mashed potatoes and I pretty much made them by accident:
1 bag potatoes
1 bunch scallions
1/3 a medium red onion
2 cloves garlic
1 7-oz cup greek yogurt
- Wash, stab repeatedly, then bake potatoes at 450 for 50 minutes.
- Chop scallions, onion and garlic by hand or with a food processor, but they should be finely cut.
- Take potatoes out of oven, open potatoes while still hot, scoop out potato flesh, set skins aside or discard as desired.
- With a hand mixer, blend chopped herbs , potatoes and yogurt, adding water as necessary to create desired consistency.
- You’re done!
